I don’t know about you, but this Monday morning I could really use a pick me up. These glazed carrot cake donuts from Brooklyn Farm Girl are absolutely TO DIE FOR. The perfect addition to any Monday morning. I made just a few tweaks like adding just a touch of cinnamon to the glaze and using apple pie spice in place of all spice. These donuts are scrumptious. glazed carrot cake donut recipe

Ingredients for 1 dozen donuts (recipe adapted from Brooklyn Farm Girl’s original recipe)
  • 1  egg
  • 1/2  cup orange juice
  • 1/4 cup melted and slightly cooled butter
  • ½  teaspoon vanilla
  • 1/4  cup brown sugar
  • 1  cup flour
  • 1/2  teaspoon baking powder
  • 1/4  teaspoon baking soda
  • 1/4  teaspoon salt
  • 1/2  teaspoon cinnamon
  • ¼  teaspoon apple pie spice (find in the spice aisle at the grocery store)
  • 1  ¼ cup shredded carrots
For the glaze
  • 2  tablespoons  milk
  • 1/2  teaspoon vanilla extract
  • 1  cups confectioners powdered sugar
  • 1/4 teaspoon cinnamon
For the donuts:
  1. Preheat oven to 350  degrees.
  2. Beat egg in a mixer then add orange juice, melted butter, vanilla and sugar, beat well.
  3. Mix in flour, baking  powder, baking soda, salt, cinnamon and apple pie spice. Mix until combined.
  4. Using a spatula, fold in shredded  carrots.
  5. Using a donut pan, fill up 12 donut holes.
  6. Bake for 9-11 minutes. Let donuts cool for at least 2 minutes before placing in the glaze mixture.
For the glaze:
  1. Combine milk and vanilla  in a saucepan  over medium heat.
  2. Mix cinnamon into powdered sugar.
  3. Add powdered sugar mix into the milk mixture. Whisk until you have a good glaze consistency.
  4. Remove from heat and immediately dip donuts into the glaze mix.
  5. Place on a cooling rack
